Another new coffee from the Shyira washing station. This time anaerobically fermented and natural processed. This one is truly special. It’s highly aromatic, with a complex fruit-forward profile: ripe pineapple, gummy-bear candy, and cocoa. Clean, intense, and juicy in the cup.
The coffee is anaerobically fermented, meaning the cherries are fermented in an airtight environment before being dried whole. The fruit is removed from the beans only after drying. This process creates an especially deep, complex, and intense flavor profile.
Muraho Trading Co. produces coffee through its six washing stations across Rwanda. They established the Shyira washing station in the Nyabihu area in 2017, after the success of their earlier station in Nyamasheke. Muraho’s goal was to showcase Rwandan coffee more strongly, further refine their flavor profiles, and discover unique regions in Rwanda where they could both produce exceptional coffee and create meaningful impact through specialty coffee. Shyira was born from that vision in January 2017.
Shyira is the smallest of Muraho’s six stations and the highest-altitude washing station in Rwanda, located at 1,850 meters above sea level. The weather, soil, and elevation make the area ideal for top-tier coffee production. Shyira is about an hour’s drive from the city of Musanze, and arriving at the station offers breathtaking views from the Shyira hills—an open panorama of volcanic mountain chains, the stunning forests that are home to mountain gorillas, and the waterfalls of the Gicice River. The valleys, misty hills, and favorable climate make Shyira a truly unique and unmatched place.
