Jiménez Brothers – Finca Palermo
This coffee comes from the Jiménez brothers – Carlos, Jorge, and Sebastián – at their farm Finca Palermo in Palanda, Zamora Chinchipe, Ecuador, grown at 1,650 metres above sea level.
In the cup, a balanced and smooth coffee with delicate fruit. Apple, caramel, and creaminess. Simple and pleasant, coffee that was roasted with everyday espresso in mind. Works exceptionally well with milk too.
Finca Palermo is a project built by the whole family, which the brothers founded in honour of their grandfather. They are third-generation coffee growers who inherited their passion for coffee from their father and grandfather. Their turning point came in 2020 when our partner Caravela Coffee discovered their coffee. Since then, they've sold their harvests at better prices and received ongoing support from Caravela's PECA technicians to improve their processes and quality. The brothers manage four hectares of coffee on their farm, where coffee plants grow alongside other vegetation. They use other trees as shade crops for their coffee and to increase biodiversity.
For them, cultivation is a hands-on life, done collaboratively. Coffee cherries are carefully handpicked, the fruit is removed, and the coffee is fermented anaerobically for 48 hours in sealed plastic tanks before washing. After washing, the beans dry for 15–30 days depending on the weather.
The brothers are proud that their coffee is not only recognized for its quality, but also reaches international markets. This is their long-held dream, driven by family legacy, collaboration, and a commitment to excellence.
