El Silencio is a new addition to our selection from the Huila region of Colombia. We have sourced a very limited amount of this coffee, only 220 kilos. It offers a complex and nuanced cup, with flavors of stone fruit and tea-like lightness, a creamy mouthfeel, subtle citrus acidity, and a herbal note in the Finnish.
Behind this coffee is Arturo Avilés Quiroga, a second-generation coffee producer from Guadalupe. His farm, El Silencio, is located in the village of Alta Betania at 1,564 meters above sea level. The farm spans 8,84 hectares, of which 3,6 hectares are dedicated to Castillo coffee trees, which Arturo grows more than 16,000 of them. The harvest takes place twice a year, with the main season from October to December and a smaller Mitaka harvest from May to June.
The cherries are handpicked, after which Arturo uses a 36-hour dry fermentation in open tanks and then dries the beans slowly in the sun for 20 days. This careful processing highlights the coffee’s natural clarity and complexity. Arturo is continuously investing in the development of his farm, focusing especially on improving the drying process to ensure high quality in his coffees also in the future.
