Colombia Decaf comes from the Huila region of Colombia, where the climate and conditions are ideal for producing high-quality coffee. Grown at altitudes between 1,400 and 2,000 meters, this coffee is sourced from various small producers in the area. It is a 50/50 blend of washed and naturally processed coffees.
The caffeine is removed using the sugarcane process. The solvent used for decaffeination, ethyl acetate (EA), is derived from sugarcane. EA—essentially a type of alcohol—is formed during the fermentation of sugarcane before being mixed with water. The coffee beans are steamed to open their cellular structure, allowing the EA-water solution to extract the caffeine without damaging the beans. The process takes eight hours, with the solution changed frequently to ensure complete caffeine removal. Afterward, the coffee is steamed again to remove any residual EA, then dried and polished, ready for sale.
