Equation Decaf comes through our partner, the Colombian export company Equation Coffee. It is grown in the Huila region and is a blend of several small-scale farmers' harvests. These farmers mainly grow Caturra, Castillo, and Colombia coffee varieties.
The coffee undergoes a sugarcane process to remove caffeine. The solvent used, ethyl acetate (EA), is locally produced from sugarcane grown in Colombia. EA, essentially an alcohol formed during the fermentation process of sugarcane, is added to the beans after they are steamed to open their cellular structure. This solution extracts caffeine without damaging the beans over about 8 hours, frequently changing the solution to remove 99.7% of the caffeine. The beans are then steamed again to remove any residual EA before being dried and polished for sale.
Processing the coffee decaffeinated locally where it is grown results in a smaller carbon footprint compared to typical methods where the coffee is sent to factories in Canada, Mexico, or Germany for processing. This process generates fewer miles traveled. Decaffeinated coffee is also usually made from older crops, which are not flattering in quality. However, Equation Decaf is made from a fresh crop, making this Colombian decaffeinated coffee one of the best we've tasted.
