Our head roaster, Silja, visited in Huehuetenango area during the harvest season in February. Now the first coffees has arrived to Europe, and we are excited to start roasting these beautiful coffees to all you!
The name of Antulio’s farm, La Perla, got its name in 2004 from the great importance what the farm symbolises for the De Leon family. The name translates into the word “Pearl” and was given for the farm because De Leon family is able to live and educate their children because of the income from this land.
During the harvest Antulio makes sure that only the ripest cherries are picked and this harvest it meant in total of four passes on the farm picking the right cherries to be depulped the same day. Antulio and his family clean the cherries manually from leafs and other impurities and ferment the coffee for 36 hours. After the fermentation process the coffee is washed and different qualities are separated. Eventually the coffee is being dried on the patio in the sun for six days.
“We started producing coffee in 1995. This region of San Antonio Huista has many advantages for coffee production due to its high altitudes and cold climate. Together with the location and careful processing methods we have been able to produce great quality coffee in a productive and sustainable way”, tells Antulio.
