Our head roaster, Silja, visited in Huehuetenango area during the harvest season in February. Now the first coffees has arrived to Europe, and we are excited to start roasting these beautiful coffees to all you!
Candelaria Perez is a second-generation co ee producer in Concepcion Huista in Huehuetenango region. During the harvest Candelaria made sure that only the ripest cherries were picked which meant in total of four picking passes on the farm this harvest. The cherries were depulped on the same day of the picking and fermented in plastic tubs for 36 hours. The coffee was then washed and soaked for further 12 hours in clean water. This method is called “double soaking” and usually translates to clean and sweet cup. The coffee was dried on a patio in the sun for six days and which after the parchment was manually sorted and packed.
The farm of Candelaria, T’Zun-Wit’z, gets its name from the T’Zun-Wit’Z mountain which means “Birth of the Hill” in the local indigenous Popti language.
We roast and ship the coffees from Tuesday to Thursday. Please give your order by Tuesday to get your coffee shipped on the same week.
