Roasted for filter coffee
Indulge in the exquisite flavors of Yulchen, a true labor of love from the hands of first-generation coffee producer Cristina Hernandez Diaz. Nestled in the picturesque town of Petatan within the enchanting Huehuetenango region, Yulchen is a tribute to generations of dedication to the art of coffee cultivation. With a meticulous approach to every step of the process, Cristina ensures that only the ripest cherries are meticulously selected during the harvest. She goes the extra mile, investing in selective picking by paying her pickers more for their expertise. This dedication results in multiple passes on the farm throughout the harvest season, guaranteeing an unparalleled level of quality in each cherry.
The journey of the coffee begins with the cherries being promptly depulped on the same day as picking. Through a careful process of fermentation and washing with pristine water, the essence of the beans is nurtured to perfection. The culmination of this process involves sun-drying the coffee on inviting patios for five to six days, allowing nature's touch to elevate the flavors to their fullest potential.
The name "Yulchen" speaks to the deep-rooted connection Cristina has with her land and heritage. Derived from the local indigenous language Popti, Yulchen translates to "Between the Stones." This name is a testament to the unique environment of the farm, surrounded by sizable rocks that maintain a cool climate optimal for coffee cultivation. Within these rocky confines lie hidden gems, caves that serve as homes to the region's diverse wildlife, including bats and vultures.
Cristina's journey is a testament to the transformative power of hard work and determination. Having ventured to the United States seeking economic stability, she used her earnings to fulfill her dream of owning the land she cherishes today. With the help of her devoted wife and children, they cultivated a nursery and brought life to the land. Yulchen is not just a farm; it's a testament to the resilience of a family's aspirations.
As we peer into the future, Cristina's vision extends beyond the present. She's committed to refining agronomic practices and exploring innovative processing methods, pushing the boundaries of coffee excellence even further. Cristina's heartfelt words resonate deeply: "The farm has sustained our family, enabling our children to pursue education." Each sip of Yulchen Specialty Coffee encapsulates this enduring legacy, connecting you to a journey of generations past and a future brimming with promise.
