It is a washed coffee, but the process includes an unusually long and carefully controlled fermentation, adding extra depth and structure to the cup. The result is clean and balanced, yet still distinctive—sweet, clear and long aftertaste. In the flavor you can find notes of apple pie, almond, and brown sugar.\u003c\/p\u003e\n\u003cp data-start=\"471\" data-end=\"1061\"\u003eEl Caliche is a five-hectare farm run by Leodan Bautista Vásquez, a 30-year-old father of three. He is a third-generation coffee farmer and started farming 16 years ago when his father passed down a piece of land to him. Through persistence and determination, Leodan has expanded the farm to its current size, continuing a family legacy that goes back to his grandfather—one of the pioneers of coffee cultivation in the area. For Leodan, coffee is tradition, but above all it is a way to provide for his family and create better opportunities for his children, especially through education.\u003c\/p\u003e\n\u003cp data-start=\"1063\" data-end=\"1664\" data-is-last-node=\"\" data-is-only-node=\"\"\u003eProcessing at El Caliche is done step by step and with great care. Ripe cherries are selectively handpicked and first fermented for 65 hours in sealed plastic bags. The cherries are then depulped, and the coffee undergoes a second dry fermentation in tanks for 48 hours. After fermentation, the coffee is dried in a solar dryer on raised African beds for 22–25 days until moisture is stable. Once dried, the beans rest in plastic bags before milling at the dry mill.
