A truly special batch has arrived at the roastery! This flavor bomb comes from a farm called Finca El Salvador, located in the Santa Ana region of El Salvador, at an altitude of 1350–1670m. It is a Red Bourbon variety coffee, with cherries that have been macerated (anaerobically) in low-oxygen conditions for 120 hours before being processed using the traditional natural method. This maceration enhances the depth and complexity flavors, adding subtle fermentation notes without being overly funky. You can expect rich, ripe tropical fruitiness, juiciness, and sweetness in the cup, and a bit of rum :)
The farm is run by Rodolfo Ruffati Batlle, whom we met a few years ago at the Berlin Coffee Festival. It took a few years to bring his coffee to Finland, but the wait has finally paid off. Rodolfo is a sixth-generation coffee producer and the fourth generation of his family to own and manage the Finca El Salvador farm. Coffee is his passion—he strives to produce the best possible coffee while working in harmony with nature. The farm cultivates dozens of different coffee varieties, picked by Rodolfo during his travels around the world, representing the finest selections of coffee. Hopefully, we’ll be able to bring more of his coffees to Finland in the future!
