Delicious "honey"-processed coffee from Los Chelazos, El Salvador. This coffee offers a smooth, full-bodied cup with captivating sweetness. You'll taste notes of brown sugar, nuttiness, and a hint of fruitiness.

The coffee comes from northern El Salvador, specifically from the Montecristo National Park, an area known as the tri-border region where El Salvador, Guatemala, and Honduras meet. This region provides rich growing conditions not only for coffee but also for other vegetation. The coffee is a blend from producers in the areas of Citalán and La Palma, brought together by our green coffee partner, Caravela Coffee. Caravela established a purchasing station in the region in 2015, where around 25 committed producers bring their coffee for sale. Caravela ensures that the quality remains high year after year. Many of the producers have been partners with Caravela for nearly a decade.

The farmers in this region share similar growing conditions and, thanks to meticulous work, produce consistent quality coffee. The farms are small to medium in size, located at altitudes of approximately 1200-1800 meters, and have excellent soil for coffee cultivation. This allows for the blending of harvests from multiple producers, resulting in a delicious and consistent coffee.

This coffee is processed using the "honey" method, where the "honey layer" (a sticky, sugary mucilage) surrounding the coffee bean is left on the bean and not washed off as in "washed" processed coffees. This method brings more sweetness and a fuller mouthfeel to the coffee. At the start of processing, the coffee cherry is fermented whole for about 12 hours, after which the cherry is removed, and the coffee is dried.
