We visited in Huehuetenango area during the harvest season in February 2019. This is the second year in a row that we are buying coffee from Candelaria Perez and we are excited to start roasting this beautiful coffee to all you!

Candelaria Perez is a second-generation coffee producer in Concepcion Huista in Huehuetenango region. During the harvest Candelaria made sure that only the ripest cherries were picked which meant in total of four picking passes on the farm this harvest. The cherries were depulped on the same day of the picking and fermented in plastic tubs for 36 hours. The coffee was then washed and soaked for further 12 hours in clean water. This method is called “double soaking” and usually translates to clean and sweet cup. The coffee was dried on a patio in the sun for six days and which after the parchment was manually sorted and packed.

The farm of Candelaria, T’Zun-Wit’z, gets its name from the T’Zun-Wit’Z mountain which means “Birth of the Hill” in the local indigenous Popti language.

This 100% Yellow Bourbon Pulped Natural lot has a classic cupping profile, with soft acidity, yellow fruits, chocolate and a good body.

Mantiquiera means “where the mountains cry.” This micro-region is located on the slopes of the Mantiqueira Mountains on the Minas Gerais side. The land borders São Paulo and Rio de Janeiro states. The region has a long tradition of coffee growing with many generations participating in the production of excellent, world renowned specialty coffee.

This coffee is roasted for espresso use. It is soft and balanced and suits well with milk drinks!

1,640 farmers from 22 nearby hills contribute their cherry to Gihere Washing Station. The washing station is overseen by the sustainability and the manager, Roméon Patience. The station has 3 soaking tanks, 12 fermentation tanks, 230 drying tables, 4 selection tables and 6 floating tanks.The season typically runs from April to June. This coffee is from 2020 crop.

This coffee comes from Bwindi Kingha Collective and it is a washed and dry-fermented coffee. It is a blend of SL varieties commonly planted and grown in the region. The coffees are grown by a farmer group located predominantly in the hills surrounding Bwindi Impenetrable Forest. Naming this blend Bwindi is fitting as the majority of the outgrower farmers will remain the same year after year.

Bwindi is in the same locality as Kingha Estate, where altitudes range from 1300 to 1600 masl. The cherries are purchased from the farmers and processed and dried at Kingha Estate, which has a wet mill that operates as a communal micro-washing station.

This coffee comes from a 41 bag (á 60kg) lot, picked over a period of some weeks. These cherries are floated, then pulped by a Penagos Eco-Pulper, but by-passing the demucilager, keeping all mucilage on the parchment. From there the coffee goes to a tank for fermentation before it is carefully dried on raised tables, partially under shade and cover from the rain.

We are so glad to work together with Simeon Palacios. We have bought his coffee in two years a row and absolutely love this sweet fruity coffee. Our head Roaster, Silja, visited at the El Naranjo Farm few years back during the harvest time, and met the whole family. Simeon and his wife Alvina Castillo are true coffee professionals. 

Ever since Simeon was a young boy he enjoyed to work on the farm and he always liked the idea of having his own land and farm on it. Twenty years ago, he got the opportunity to buy his first plot. It took him 5 years to really start his coffee plantation, as he had to save little by little and invest in the land first. Simeon loves the idea of experimenting on his farm but emphasises that the natural environment is always critical in this.

There is no way of innovating without taking care of the surroundings. Their plans for the near future is to improve the fermentation tanks and enhance the overall infrastructure at the farm.
