l Paraiso Farm is located in the municipality of Piendamó, with a mild-humid climate at 1930 masl, focused on specialty coffees. His owner, Mr Diego Bermudez, has a bachelor degree as Agricultural Business Manager and has been working with coffee since 12 years ago.

Mr. Diego Bermudez founded a company with his family called INDESTEC with which they are manufacturing an innovative technology for coffee drying named ECO-Enigma. This machine allows them to fully control the drying process which is critical in their production of specialty coffee with standardized times and temperature. With his company, Mr. Diego and his family are building an inclusive social program, allowing their neighbors to process their coffee with their infrastructure and know how of controlled fermentation process and receive a better price for their coffee.

Ariovaldo Bonfim’s farm, Fortaleza, is located in the city of Patrocínio, Minas Gerais, in the Cerrado Mineiro growing region of Brazil. Born and raised in the state of Paraná, he and his family relocated here in 1987 seeking better climate conditions for coffee production. The relocation came with its own challenges though, proving that a lack of skilled labor and machinery resources still made farming difficult. It wasn’t until commercializing their process that they were able to increase their production levels and eventually expand their crop.

Within Cerrado there are many microregions that present unique characteristics in the cup. The Chapadão de Ferro microregion, where Ariovaldo’s farm can be found, is a small town with farms situated around the cone of a partially formed volcano. Farms here are at higher elevations above 1100 meters and coffee is harvested a month or two later than in other parts of Cerrado Mineiro.

Today, Ariovaldo farms with the help of his wife and children, cultivating 5 hectares of coffee on their 5.5 hectare property. They produce several varieties here, including Red and Yellow Catuai, Arara, and Acaia, totalling 330 bags annually. This lot is a Natural process Acaia coffee. Acaia is a cultivar closely related to Mundo Novo, and produces large cherries and seeds.

This coffee comes from Bwindi Kingha Collective and it is a washed and dry-fermented coffee. It is a blend of SL varieties commonly planted and grown in the region. The coffees are grown by a farmer group located predominantly in the hills surrounding Bwindi Impenetrable Forest. Naming this blend Bwindi is fitting as the majority of the outgrower farmers will remain the same year after year.

Bwindi is in the same locality as Kingha Estate, where altitudes range from 1300 to 1600 masl. The cherries are purchased from the farmers and processed and dried at Kingha Estate, which has a wet mill that operates as a communal micro-washing station.

This coffee comes from a 41 bag (á 60kg) lot, picked over a period of some weeks. These cherries are floated, then pulped by a Penagos Eco-Pulper, but by-passing the demucilager, keeping all mucilage on the parchment. From there the coffee goes to a tank for fermentation before it is carefully dried on raised tables, partially under shade and cover from the rain.

Chelbessa Washing Station, where this coffee was processed, is fairly new to the coffee landscape in Yirgacheffe. Nonetheless, this family-owned and operated washing station is producing exceptional coffees on par with some of the region’s most renowned and established outfits.

Farmers in this region have farmed coffee for generations upon generations. They are true specialists and are committed to using the best chemical-free cultivation methods. These cultivation methods result in an already stand-out product, and Chelbessa makes the most of this by adhering to stringent post-harvest standards.

All coffee is selectively hand-harvested before being delivered to the washing station. At the washing station, Chelbessa’s team ensures that only the ripest cherries are processed. After being sorted, coffee is pulped and then fermented for 24-36 hours, depending on the weather conditions. Once fermentation is complete, the parchment is thoroughly washed in clean water and send through grading channels, which separate each lot into two grades based on density. Once graded, the coffee is soaked in clean spring water in tanks for 12-24 hours to remove all traces of fermented mucilage.

Once parchment is fully washed and soaked, it is laid to dry on raised beds for 10 to 14 days. During this time, the parchment is regularly turned and hand sorted several times to remove any damaged or discolored beans. Drying parchment is covered with plastic during the hottest hours of the day to protect the parchment from drying too quickly. Equally, it is covered overnight to prevent condensation from seeping into the drying parchment. This labor and love result in a truly exquisite cup profile.

The Inga community of Aponte is comprised of descendants of the ancient, pre-hispanic Incas. During the period of conquest, they remained isolated high in the mountains that became their natural refuge. This community did not resume significant contact with the rest of Colombia until the second half of the nineteenth century. Unfortunately, in the 1990’s, contact was mostly criminal, and the Inga’s refuge became a place of cruelty. For years the tribe was forcibly involved in poppy and heroin production under the influence of guerrilla groups, drug traffickers, and paramilitaries. The once-peaceful mountains teemed with illegal plantations and violence, in which the Ingas were trapped until as recently as fifteen years ago.

In the last decade the mountains have become a safe zone for the Inga tribe, and illegal crops were eradicated to give way to a new culture: coffee! The Caturra variety has been planted in the Inga territory, on smallholder properties in the Resguardo Inga Aponte, at an average of 2150 meters above sea level. This elevation, combined with the Galeras Volcano constantly shedding nutrient-rich ash, makes for an exceptionally complex and sweet coffee.

Producers process coffee on their own properties, drying Honey coffee in stacked raised bed solar dryers on their farms. This process reduces water used for washing coffee and complements the natural complexity of coffees from this special region.

1,640 farmers from 22 nearby hills contribute their cherry to Gihere Washing Station. The washing station is overseen by the sustainability and the manager, Roméon Patience. The station has 3 soaking tanks, 12 fermentation tanks, 230 drying tables, 4 selection tables and 6 floating tanks.The season typically runs from April to June. This coffee is from 2020 crop.
